Gotta love these… They are delicious, packed with nutrients and oh so easy to make.

From the dogs to the baby, everyone in my household loves these.
You can mix in just about anything with the egg whites but I think the following ingredients work a treat!

Use a non stick muffin tin with one single spray of 1Cal Spray Oil in each cup to make sure your works of art don’t stick.

Egg White Muffins

Ingredients
2 1/2 cups egg whites
1 cup chopped fresh spinach
1/2 cup quartered cherry tomatoes
1/2 cup diced mushrooms
1 Tablespoon chopped fresh chives or any other herbs
1/2 cup diced avocado

Method:

Preheat the oven to 170c. Grease the muffin tin cups with the cooking spray.
In a large bowl, whisk together the egg whites, spinach, tomatoes, mushrooms,  herbs, 1/2 teaspoon salt and 1/4 teaspoon pepper.
Divide the mixture evenly among the 12 muffin tin cups.
Bake the muffins for 20 to 25 minutes, or until the egg whites are fully cooked.
Remove the muffins from the oven and let them cool for 5 minutes in the tin before using a knife to loosen the muffins from the cups.
Top each muffin with diced avocado and serve immediately.
