This is a nutritious and delicious soup, packed with nutrients and just pure goodness.

This recipe yields quite a lot so you can freeze portions. It is particularly great for those with extremely busy lives who find it hard to cook in the evenings. Very low carb, this soup is perfect as a supplementation of your evening meal. It will nourish you and make you feel full and happy!

I make this soup in a pressure cooker as I find it easy.

Turmeric Green Soup

Ingredients
1 Sweet Gem lettuce
400 grams Kale
100 grams Broccoli
100 grams Spinach
2 White Onions
3 Garlic cloves
2 Celery sticks
100g Broad beans (I used fresh but you can use pre-cooked if easier)
200 grams Peas
1 tbs Turmeric
2 tsp Cumin
2 tsp Pepper
2 tsp Smoked paprika
2 tbs Rapeseed oil (or coconut oil)

Method:

Fry the onions garlic and celery sticks in the rapeseed oil, on low heat for about 5 minutes.
Add the spices and stir for 2 minutes.
Add a little water and all the remaining ingredients.
Close the lid of your pressure cooker and up the heat to medium. Cook for ten minutes if using fresh broad beans or 6 minutes if using pre-cooked.
Let it cool under pressure (this should take around 5 minutes).
I like my soup creamy so I used a hand blender but it is just as delicious with bits.
You can make a complete meal by adding a couple of poached eggs on top of two rice cakes! Delicious and so easy.
